Ingredients

  • 1 lb carrots, peeled and grated (about 5-6 medium carrots)
  • 1 tsp curry powder
  • ¼ cup cilantro, finely chopped
  • 1 tbsp olive oil
  • Salt (optional)

Directions

  1. In a bowl, add carrots, curry powder, and cilantro. Salt to taste.
  2. Mix well and let sit for 15 minutes in the refrigerator for flavors to mix.
  3. In a medium skillet, warm oil over medium-high heat. Add carrot mixture and cook for 3-4 minutes or until tender, stirring often. Serve warm.
