Ingredients
- 1 lb carrots, peeled and grated (about 5-6 medium carrots)
- 1 tsp curry powder
- ¼ cup cilantro, finely chopped
- 1 tbsp olive oil
- Salt (optional)
Directions
- In a bowl, add carrots, curry powder, and cilantro. Salt to taste.
- Mix well and let sit for 15 minutes in the refrigerator for flavors to mix.
- In a medium skillet, warm oil over medium-high heat. Add carrot mixture and cook for 3-4 minutes or until tender, stirring often. Serve warm.
