Ingredients
- ¼ cup soy sauce*
- 1-2 tbsp brown sugar
- 2 garlic cloves, minced
- 1 tsp fresh ginger, grated; or ¼ tsp powdered ginger
- 1 tsp corn starch
- 1 tbsp vegetable oil or olive oil
- 1 lb 90/10 ground beef
- 2 cups cooked long-grain enriched white rice
- ¼ tsp chili pepper flakes (optional)
Directions
- In a non-stick skillet, cook the ground beef over medium heat.
- As the ground beef is cooking, whisk together in a bowl the soy sauce, sugar, garlic, ginger, chili pepper flakes (if desired), corn starch and oil.
- Once the beef is fully cooked, add the sauce and cook on medium-low for 5 minutes.
- In a bowl or plate, scoop ¼ cup of rice and then ¼ cup of Korean beef.
¼ cup beef + ¼ cup rice provides 1 ½ oz eq. meat/meat alternate and ½ oz eq. grains
*As a best practice, choose ingredients that are whole grain, low-fat or low in sodium when possible.
